Introduction:
Ragù takes about 2 hours to be ready, so when I make it I usually prepare Ragù for a battalion and then i'll put mono portions in plastic glasses and then in the freezer.
Ragù is good (very good) to make a pasta or lasagne... but it can also be used on smashed potatoes, polenta or even with bread!

Ingredients:
2 onions
2 carrots
2 celery sticks
a bit of (extra virgin) olive oil
1 glass of wine
200g Mortadella
1500g minced meat
some juniper
some cloves
1lt tomato sauce
3 cans tomato pulp
1/2 tube of tomato paste (concentrated)


Procedure:

Take off the bayonet from ur rifle and use it to chop onions, carrots and celery.


put all in the pot with the oil and cook at medium heat for 3-5 min.

in the while finely chop the mortadella.


Then raise the heat, wait 20-30 sec and add the glass of wine and let it vanish.

At this point add mortadella and minced meat and reduce the heat (medium).

Put juniper and cloves in a gauze and close it with 2 nodes. Put it in the pot.


When the meat is browned reduce the heat (very low) and add all the tomato.

Let it cook at least 1 hour, 1 hour and 1 half is better.

By the way, that's a long time for a sauce! When I prepare sauces, just take me about 20 mins :O anyway I'm excited to prepare them

After reading the title of your thread, I assumed I would find a recipe of Ragu sauce dumped in a bowl with some chopped up bologna mixed in. For a few cents more, you could buy the garlic bologna. A few minutes in the microwave and you would have a delicious meat sauce that you could pour on just about any noodle.

I figure a little salt and pepper does the trick with a can of generic brand spagetti sauce. Maybe I'll chop up an onion if I am feeling like a chef that day. Dump in a pack of hot dogs and shazam! Dinner is served.

Just a small thing I have noticed here in Australia....

when Knoll mentions a 1 Lt tomato sauce he means passata or the proper tomato ONLY sauce as here ( In Australia ) they can at times go to the local shop and buy a Lt of Ketchup sauce or the same one they use on Hot dogs etc... you know what I mean??

for Aussies Tomato Sauce is ketchup... and if you put that on spaghetti or anywhere near Italian food your chances of being shot by any nearby Italians will have increased by at least 37%....

I had a girlfriend's mum in my youth who when she found out I was Italian she insisted on making me spaghetti... it was the worse thing I have ever tasted with Corn and god knows what else she put in it LOL...
